Pet-Nat is an abbreviation of the French term pétillant-naturelle. The production method is also known as méthode ancestrale. This is a naturally sparkling wine that is bottled before the first fermentation is finished, allowing the bubbles to form from the natural sugars present in the grapes.

We do not add sulfur and we do not filter the wine. The sediment that remains in the bottle ensures the wine’s stability.

This ancient method is, on one hand, very simple, but on the other, because of the unpredictability of the final result, also one of the most challenging.

The result is a rustic yet delicate, lively, and very fruity sparkling wine that is an exceptional expression of its terroir.

The taste

The wine is a delicate yellow color. The effervescence is relatively lively with fine bubbles. The bouquet is youthful, revealing floral and fruity notes. Aromas of meadow flowers and pear intertwine. A gentle, very drinkable sparkling wine.

Mermaid

Our grandfather, who drove wine to Trieste told the story of how the sea once got his attention. He saw a mermaid whose beauty and grace surpassed anything he had ever seen. The nymph tried to convince him to join her. With just one move she changed the direction of the wind – a nearby boat’s sail crept and hit the sailor on the neck. Grandfather watched this storm in the sea and forgot he was transporting wine. The wagon with the wine leaned over and the barrels rolled off to the sea. He did not care about it; he had seen the most beautiful being which would be cemented in his memory forever. We dedicated him our sparkling Pet-Nat, who, like the sea after the storm, only when it’s calm reveals the narrative of an unbounded love.
