Zelen is an old indigenous white-wine grape variety exclusively found in Vipava valley Slovenia. Very limited production. Fedora Zelen is an herbaceous, gentle, and full-bodied wine with just enough freshness and softness, rounded and distinctly mineral.
The smell is very intense and fine. We can recognize the aroma of Mediterranean spices, laurel, rosemary, and thyme.

7 days in big open vats, no temperature control
Vinification:
Spontaneous fermentation, no cultivated yeasts added
Maturation:
1.600 L oak barrels, 12 months on the lees

No filtration, bottling according to lunar phases

The youth made them inseparable friends. They did everything together. One was a hunter, the other a dog. One caught animals, the other caught rays of sunshine in the forest, condensing them into sweetness on the bottom of his glass. Then one day, frolicking carefree through the woods, they heard a noise in the bushes. The dog rushed towards it while the hunter prepared his rifle and already imagined getting another feather tho adorn his fedora. But for a brief moment, a beam disturbed his aim, his rifle trembled and  fate stole the life of one that was dearest to him. This was the last time the hunter touched a gun. Since then he has decided to become a mere observer of his forest. And, stunned by all the shades of green, he started catching the sunâs rays and condensing them into sweetness that fills our glasses.
